Ingredients Serving: 4

  1. 1 cup poha/ flattened rice
  2. 1 cup powdered sugar
  3. 2 cups water
  4. 1/4 tsp cardamom powder
  5. 1-2 pinch orange food colour
  6. 4 tbsp ghee
  7. 5-6 cashew nuts
  8. 6-8 raisins
  9. Few kesar strands for garnishing
  10. Silver vark (optional)

Instructions

  1. In a non stick pan dry roast poha for few minutes till it is light brown in colour. Do not over roast it.
  2. After roasting the poha looks like this.
  3. Grind the roasted poha into a coarse powder.
  4. Heat 1 tsp ghee in a pan and fry the cashews and raisins till nice golden brown.
  5. Once done take it out on a plate and keep aside.
  6. Heat water in a pan and bring it to boil.
  7. Add the roasted poha powder and mix well so that no lumps are formed.
  8. The poha will be cooked completely when the water is absorbed.
  9. Next add powdered sugar and stir continuously.
  10. Add orange food colour, cardamom powder and mix it well.
  11. Add ghee and keep stirring till the kesari becomes a whole mass without sticking to the sides of the pan.
  12. At last add cashews and raisins, mix well and switch off the flame.
  13. Serve hot and enjoy delicious Poha Kesari.
