ABOUT Poda pitha RECIPE

Poda pitha is an authentic odia cuisine prepared specifically during the swing festival. Though traditionally it used to be baked whole night in a "chulha" we can also bake this delicacy in an oven . Poda pitha literally translated to burnt cake as the top of the cake has a little burnt texture.

Ingredients Serving: 4

  1. Rice Flour 2 cups
  2. Water 2 cups
  3. Milk 2 cups
  4. Jaggery powder 1 cup
  5. Bay leaf 2
  6. Nutmeg powder a pinch
  7. Salt a pinch
  8. Cardamom powder 1/2 teaspoon
  9. Black pepper powder 1 teaspoon
  10. Grated coconut 1 /2 cup
  11. Sliced coconut 1 /2 cup
  12. Cashew and raisins 1/2 cup
  13. Ghee 1 tablespoon

Instructions

  1. In a deep bottom non stick pan take water and milk. Add jaggery powder to it and let it melt.
  2. Take ghee in a pan and fry the sliced coconut, cashew and raisins one by one and keep aside.
  3. When the jaggery melts completely add cardamom powder, black pepper powder, nutmeg powder, bay leaves and, grated coconut to it and let it come to boil.
  4. Now add the rice flour in three to four small batches mixing it carefully so that no lumps are there.
  5. Then add the fried coconut, cashew and raisins.
  6. Now keep stirring the mixture till it thickens into a dough form.
  7. In the mean time preheat the oven to 1 70 degree and grease a baking pan.
  8. When the dough is still little warm grease your palm with little water and gently knead the dough for a couple of minutes.
  9. Now put the dough in the baking pan and bake at 170 degree for 60 minutes.
  10. Check the doneness of the cake using a tooth pick.
  11. When done let it completely cool down. Then slice and serve
