Ingredients Serving: 4

  1. For eclairs ( choux pastry)
  2. All purpose flour 1/2 cup
  3. Sugar 1 teaspoon
  4. Salted butter 4 tablespoon
  5. Large eggs lightly beaten 2
  6. Water 1/2 cup
  7. For lemon curd
  8. Lemon juice 4 tablespoon
  9. Lemon zest 2 teaspoon
  10. Sugar 200 grams
  11. Butter 200 grams
  12. Egg yolk 2
  13. For chocolate ganache
  14. White chocolate ganache 300 grams
  15. Amul fresh cream 100 grams
  16. For presentation
  17. Colourful sprinklers

Instructions

  1. For choux pastry heat a sauce pan . To this add butter and let it melt ..Also add sugar to this and let it dissolve.
  2. Then add flour to water and continuously mix till it start leaving sides of sauce pan .
  3. Let it cool down .
  4. Now add lightly beaten egg to this and whisk till creamy consistency is obtained
  5. Mixture should fall in ribbon form
  6. Preheat oven at 200 degree
  7. Now fill flour mixture in a piping bag .
  8. Cover baking tray with parchment paper
  9. Pipe out eclairs of 3-4 inch on.baking tray
  10. Bake in a preheated oven at 200 degree for 15mins
  11. Then lower the temperature to.180 degree and bake for another 25 mins till eclairs are dry from inside
  12. For lemon curd.
  13. Heat a sauce pan with 1/4 th water filled in it
  14. Now in.a.bowl add all the.lemon curd ingredients and keep mixing .
  15. Cook till mixture thickens and start coating back of spoon.
  16. Cool it and fill in.a.piping bag
  17. For white chocolate ganache
  18. In a bowl combine both the ingredients Heat it in.microwave for 30 sec and mix. Repeat till both the ingredients are well combined. Let it cool down
  19. Then.fill it on.a.piping bag and keep ready
  20. Now divide eclairs in two parts. Pipe lemons curd filling on.one part and cover it with another part.
  21. Now pipe with white chocolate ganache swirls on eclairs and garnish it with colourful sprinklers
