Ingredients Serving: 4

  1. whole wheat flour 1cup
  2. All purpose flour 1 cup
  3. Baking powder 1 1/2 teaspoon
  4. Chia seeds 3 tablespoon
  5. Salt 1/2 teaspoon
  6. Granulated sugar 1/2 cup
  7. Dark brown sugar 1/2 cup
  8. Eggs 2
  9. Melted coconut oil 1/2 cup
  10. Large ripe bananas, mashed 3
  11. Sour cream 2 tablespoon
  12. Vanilla extract 1 tablespoon
  13. Cinnamon 1/2 tablespoon

Instructions

  1. Preheat oven to 350F and grease a loaf pan.
  2. Take a big bowl, whisk the flour, chia seeds, and salt.
  3. Take another bowl, whisk together with sugars, eggs, oil, sour cream, vanilla, mashed bananas, and cinnamon.
  4. Add wet ingredients to dry ingredients and mix until incorporated. don't not over mix.
  5. Pour into loaf pan and bake for 50 minutes, or until fully baked.
