Ingredients Serving: 2

  1. Eggplant 1 cut into 1/2 " thick round
  2. Cheese slice 1
  3. paneer 1 thin slice
  4. chilli flakes 1 teaspoon
  5. garlic powder 1 teaspoon
  6. Mexican seasoning 1 teaspoon
  7. salt to taste
  8. olive oil 1 tablespoon
  9. Bread crumbs 2 tablespoon
  10. Plain flour 2 tablespoon
  11. egg beaten well 1
  12. Grated cheese 1/4 cup


  1. Method Wash and cut the eggplant 1/2 " thick round
  2. In a small bowl add salt garlic powder chilli flakes and Mexican seasoning mix well apply this to thinly sliced paneer keep aside
  3. Beat the egg keep aside Spread the bread crumbs on a plateTake another plate spread the plain flour
  4. Slice the cheese keep aside grate the cheese keep aside
  5. Now arrange the eggplant sandwich
  6. Take one slice eggplant spread the slice of cheese on that arrange the paneer then again Press this with plain flour on side and both the sides back and front now Carefully dip it in the egg mixture Then carefully roll it on bread crumbs do this with remaining egg plant
  7. Preheat the air fryer to 180 degree for 5 minutes
  8. Take baking tin spread the foil sheet apply olive oil then arrange the eggplant Sprinkle olive oil bake for 8 to 10 minutes
  9. After 10 minutes flip and spread grated cheese bake for 2 more minutes Now the yummy eggplant cheese paneer sandwich is ready thank you Happy cooking
