Ingredients Serving: 10

  1. Semolina (sooji) 1 cup
  2. Oil 1/4 cup
  3. Sugar 3/4 cup
  4. Mango pulp 1 cup
  5. Baking powder 1 teaspoon
  6. Cardamom powder 1/2 teaspoon
  7. Vanilla extract 1teaspoon
  8. Crushed Pistachio/ honey toasted nuts 1/4 cup

Instructions

  1. In a bowl, add semolina.Add the ground sugar, baking powder, and cardamom powder and mix well.
  2. In this dry mixture, add oil & mango pulp and incorporate well.Add vanilla extract and mix well.
  3. Let the batter sit for 15-20 minutes so that the mango pulp gets absorbed by semolina.
  4. Preheat the oven to 170C.Grease and dust a loaf pan. Pour the batter into it.
  5. Bake at 170 C for 30-35 minutes.
  6. If it starts browning, lower the temperature a bit.Insert a toothpick​ in the centre of the cake to see if it is properly baked. If it comes out clean, then it is done.
  7. Take it out of the oven and let it cool completely.Unmould the cake and ice the cake ith some butter icing , mango slices and baked crushed honey nuts.
