About Lemon Butter Chicken Recipe

I picked this recipe from a Food Channel called 'Tasty'. A must try for chicken lovers.

Lemon Butter Chicken

Ingredients to make Lemon Butter Chicken

  • 6 chicken thighs
  • 1 tbsp paprika or chilli flakes
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 3 tbsp butter
  • 12 garlic cloves
  • 2 packs of cream
  • 1 cheese cube
  • 2 lemons
  • 1 bunch spinach leaves
  • 200 ml vegetable or chicken broth
  • 1 jalapeño, chopped finely

How to make Lemon Butter Chicken

  1. Marinate the chicken with red chilli flake, salt and pepper.
  2. Melt 2 tbsp of butter in a frying pan and fry the chicken until golden brown on both sides. Transfer in a Pyrex dish.
  3. In the same frying pan add garlic and fry till fragrant. Add the jalapeño and pour in the vegetable stock.
  4. Add in the cream, cheese, lemon, thyme and bring to a gradual boil on low heat. Stir in the spinach, cover and cook til it wilts.
  5. Make sure the sauce has thickened and pour it over the fried chicken. Taste to adjust seasoning and salt. Sprinkle some freshly ground pepper and put in the oven.
  6. Bake for 30 to 40 minutes on 180 degree centigrade and serve immediately.
  7. Squeeze some lemon juice just before eating. (Optional)

My Tip:

Use your own proportions as per liking to make it more spicy or less spicy.
