A simple solution is here.. Make a delicious bakery style chocolate cake from a boxed cake mix. I read about these techniques on Pinterest to bake a moist and spongy cake.. Using a boxed cake mix saves a lot of time when you don't have enough time to make a cake from scratch.. Personally, I have not been a big fan of boxed cake mixes for quite some time now, but I had one lying in my kitchen closet for a long time, so thought of giving these techniques a try.. And Believe you me, it was the best chocolate cake I have ever made from a boxed cake; and using these techniques not only made the cake super spongy with a moist crumb but also the cake never got oily and sticky after a day..!!

Ingredients Serving: 6

  1. Betty Crocker Devil's Food Chocolate Cake Mix 1 no. - 475 grams
  2. Baking soda 1/4 teaspoon
  3. Baking powder 1/4 teaspoon
  4. Eggs at room temperature 4
  5. Banana, mashed 1
  6. Softened butter 50 ml
  7. Warm milk 250 ml
  8. Vanilla essence 1 teaspoon
  9. A handful of Walnuts, chopped

Instructions

  1. Cream the butter. Add eggs one by one and beat till pale & fluffy. Add vanilla essence and mashed banana and mix well.
  2. Sieve the cake mix, baking soda and baking powder together.
  3. Add the cake premix in the egg mixture in 3 batches, alternating with milk and beat till everything is just combined. Add walnuts and fold well. Pour the batter in the greased cake tin and garnish with more walnuts on top.
  4. Bake in a preheated oven at 180 degrees centigrade till the skewer inserted in the center of the cake comes out clean.
