Ingredients Serving: 6

  1. Raw Rice
  2. Lemon 4 medium size
  3. Salt
  4. For seasoning Sesame oil 2 tablespoon
  5. Mustard seeds
  6. Channa dal required
  7. Urad dal required
  8. Peanuts
  9. Hing
  10. Turmeric
  11. Finely chopped ginger
  12. Green chillies 3
  13. Curry Leaves

Instructions

  1. Cook 2 cups of Raw rice in a vessel with 12 cups of water
  2. When the rice is cooked properly, drain excess water. For lemon or Tamarind rice , rice SHOULD NOT be over cooked or mashing consistency
  3. Cool the rice in a big vessel
  4. Heat Oil. Add Mustard. When it cracks add Channa dal and Urad dal. When the colour of dal changes to slightly golden brown add peanuts, cashews, turmeric, hing, green chillies, finely chopped ginger, coriander and curry leaves. Add to cooked Rice.
  5. Add Lemon juice and salt. Mix gently. Don't mash rice
  6. Lemon rice is ready to serve
