Poda Pitha made with rice flour, black gram,jaggery, dry fruits along with spices such as ginger,cardamom and cloves is part of a special festival in Odisha called Raja . It is an agricultural oriented festival popularly celebrated in the Coastal districts of Odisha for 3 days where food plays a major role in the form of Pithas .One of the most important part of this festival is Poda Pitha or Burnt cake means roasted. Pitha is a part of the people of Odisha where it is made from agrarian products like rice,lentils,coconut, jaggery etc. Traditionally, Poda pitha is prepared with the rice batter which is wrapped in banana leaves that are smeared with ghee, and roasted in a earthern chulha,after the days’ cooking is done. The pitha roasts slowly in the low heat allowing the flavours of the ashes and the burnt banana leaves seeping in . Once the fire has completely put off, then it is removed . That lightly burnt outer layer and the soft texture inside the pitha is one of the tastiest bites that one can have.
