Yummy cookies, I picked up this recipe from the internet blog of a Dutch Baker's daughter. One of my friend had made these, so I wanted to try it out too.

Ingredients Serving: 8

  1. 1 cup unsalted butter
  2. 2 tsp vanilla essence
  3. 1 cup white sugar
  4. 1 1/4 cup brown sugar
  5. 2 eggs
  6. 3 1/2 cup flour
  7. 2 tsp baking soda
  8. 2 1/2 tbsp speculoos spice
  9. A pinch of salt
  10. Speculoos Spice : Make and keep in an air tight jar
  11. 8 tsp cinnamon
  12. 2 tsp nutmeg
  13. 2 tsp ground cloves
  14. 1 tsp white or black pepper
  15. 1 tsp ground ginger
  16. 1 tsp cardamom


  1. Firstly ensure all the ingredients are at room temperature before starting the process. Keep the speculoos spice mix ready too.
  2. Begin by combining the butter and both the sugars together. Add in vanilla essence and when the mixture turns creamy add in one egg at a time. Use an electric mixer for best result.
  3. In an another bowl sift and mix all the dry ingredients together.
  4. With a spatula mix the dry ingredients into the wet mixture. You will get a soft dough.
  5. Depending upon the quantity you will require, divide the dough and wrap in a cling film. I divided mine in 3 parts.
  6. Store in the refrigerator for several hours or overnight for best infusion of spices. I left it overnight.
  7. Roll out the dough to 1/4" thick and cut with cookie cutters. Bake at 180 degree centigrade for 10-15 minutes.
