  15. Dark chocolate, chopped 1/4 cup –
  16. White sugar 1 1/4 cups

  18. Pure vanilla extract 1 teaspoon
  19. Room temperature 2 eggs,
  20. All-purpose flour 1/2 cup
  21. Baking soda 1/4 teaspoon
  22. Salt 1/4 teaspoon
  23. Buttermilk 1/4 cup
  24. Oreo cookies as needed

Instructions

  1. First prepare the cookie dough. In a large bowl, cream together the butter and sugars. Add the egg and then the vanilla, scraping down the sides of the mixing bowl as you go.
  2. Add the flour, salt, baking soda and baking powder and mix on low until incorporated. Lastly fold in the chocolate chips and then set aside.
  3. Now prepare the brownie batter. In a small sauce pan or in a microwave melt the butter and chocolate. Remove from heat and pour this to a large bowl.
  4. Whisk in the sugar and cocoa powder until mixed. Whisk in the vanilla and eggs, one at a time mixing until the batter is nice and shiny.
  5. Gradually whisk the sifted flour, baking soda and salt. Finally mix in the buttermilk and beat again until well incorporated. Set aside.
  6. Assembling the cake. Preheat the oven at 180 degree centigrade. Line the bottom and sides of an 8 inch square pan with aluminium foil with over hangings about 2 inches over the sides of the pan to make it easy to lift the brownies from the pan.
  7. Press the cookie dough onto the bottom of the prepared cake pan, making sure to create an even layer. Now add a layer of oreos on top of the cookie dough. Now its time for the yummy brownie batter to be poured over the oreo layer.
  8. Using a spatula spread the batter evenly. Now bake this in the preheated oven for about 35 – 40 minutes, or a toothpick inserted in the center comes out with some moist brownie crumbs.
  9. The cookie layer will be over baked if you keep it for longer time. Serve as it is or garnish with some melted chocolate or chocolate ganache. Enjoy the yummy treat with your loved ones!!!
