Ingredients Serving: 4

  1. Brinjals (long and thin variety)250 grams
  2. Sliced onion 2
  3. tomato chopped 1
  4. ginger garlic paste 1 tablespoon
  5. Panch phoron 1 teaspoon
  6. Pickle masala (any pickle)4 tablespoon
  7. salt to taste
  8. curd 1 tablespoon
  9. turmeric powder 1teaspoon
  10. Red chilli powder 1teaspoon
  11. coriander powder 1teaspoon
  12. Garam masala powder 1 teaspoon
  13. Dried red chillies 2


  1. In a pan, heat oil and add the panch phoron and dried red chillies.
  2. Add onion and the ginger garlic paste. Fry well.
  3. Add turmeric powder, red chilli and coriander powder. Add tomato and pickle masala. Mix well.
  4. Add the salt and brinjal, saute well.
  5. Add the curd and mix well.
  6. Add some water. Cover and cook for 10 minutes till the brinjals are soft.
