Ingredients Serving: 12

  1. Butter, at room temperature 1/2 cup
  2. Brown sugar/ castor sugar 1 cup
  3. Egg 1
  4. Vanilla 1/2 teaspoon
  5. Whole wheat flour or all purpose flour 3/4 cup
  6. Instant oats 1.5 cups
  7. Baking soda 1/2 teaspoon
  8. Baking powder 1/4 teaspoon
  9. A pinch of salt
  10. Chopped cranberries and 70 grams chopped prunes 70 grams

Instructions

  1. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg and vanilla.
  2. In another bowl, combine the sifted flour, baking soda, baking powder and salt; gradually add to creamed mixture and mix well.
  3. Stir in the oats and the chopped cranberries and prunes. If mixture feels too wet add a spoon of flour and adjust accordingly.
  4. Shape into 2 inch balls (yes, yes, these are going to be jumbo!!) Place 2 inches apart on baking tray lined with parchment paper.
  5. Bake at 175 degrees centigrade for 14-15 minutes or until golden brown. Cool for 1-2 minutes before removing to wire racks.
