Ingredients Serving: 8

  1. Thandai Mix
  2. 1/4 cup almond toss lightly
  3. 1 tbsp Melon Seed
  4. Pepper Corn 12 - 14
  5. Poppy seeds 1 tablespoon
  6. Fennel Seed 1 tablespoon
  7. Cardamom Powder 1/2 teaspoon
  8. Jeera seed 1/2 spoon
  9. Cookie Dough
  10. Castor Sugar 1/2 Cup
  11. Maida 1.25 Cup
  12. Wheat Flour 1/4 Cup
  13. Baking powder 1/4 tablespoon
  14. Saffron 4 to 5 strands soaked in 2 tablespoon of warm milk
  15. A pinch of salt
  16. Thandai mix 1/4 cup

Instructions

  1. For Thandai Mix
  2. Grind all the ingredients mentioned in the spice blender and make fine powder. This will yield 1/4 cup of powder
  3. For Cookie
  4. Crush the saffron and soak it in warm milk for at least an hour to steep its flavor
  5. Whisk together the maida, whole meal, baking powder
  6. Mix the thandai powder and whisk well
  7. Beat Sugar and butter till fluffy.
  8. Mix the saffron soaked milk and whisk
  9. Add dry ingredients and mix well. Ensure that all the ingredients come together. Do not knead
  10. Make into 2 equal sized balls and roll it into 1/4 inch thickness
  11. Using 2 inch cookie round cutter cut into pieces
  12. Transfer these pieces into the baking plate and refrigerate it for 30 minutes before baking
  13. Preheat the oven at 170 degree cenyigrade
  14. Bake the cookie for 10 to 12 minutes or till the sides turn brown
  15. Cool it completely and store in airtight container
