Muffins made with spinach, tomato.

Ingredients Serving: 4

  1. Suji 1 1/2 cup
  2. Curd 1 1/2 cup
  3. Ginger 1 tablespoon
  4. Salt to taste
  5. Lemon juice 1 tablespoon
  6. Eno 1 pouch
  7. Oil 2 tablespoon
  8. Mustard seed 1 tablespoon
  9. Green chilli (slited) 2
  10. Tomato puree 2 tablespoon
  11. Spinach puree 2 tablespoon
  12. Curry patta 10 to 12 leaves

Instructions

  1. In a bowl put Suji, curd, lemon juice, ginger, salt and mix well.
  2. Divide it in 3 bowls.
  3. In first bowl add spinach puree and mix.
  4. In second bowl add tomato puree and mix.
  5. Third bowl remain the same.
  6. Cover all bowls and leave for 20 minutes
  7. Add half tablespoon of eno in each bowl and mix lightly.
  8. Pour 2 tablespoon of mixture in greased muffin mould and put in micro for 3 minutes on high.
  9. In a pan add oil then mustard seed, green chilli and then curry leaves and spliter it.
  10. Demould the muffins and put the mustard seed mixture on each muffin.
  11. Serve with Ketchup.
