ABOUT Honey Roasted Peach Crema Catalana RECIPE

Crema catalana ("Catalan cream") or crema quemada ("Burnt cream"), is a dish similar to crème brûlée. It is traditionally served on Saint Joseph's Day (March the 19th) although nowadays it is consumed at all times of year. The custard is flavored with lemon or orange zest, and cinnamon. The sugar in crema catalana is traditionally caramelized under an iron broiler or with a specially made iron, not with a flame. The recipe with the twist of honey roasted peach is an outstanding and marvellous touch of Rachel Khoo an English chef, writer and broadcaster, with her own BBC cooking series.

Ingredients Serving: 4

  1. 2 fresh ripe peaches
  2. 4 tablespoons honey
  3. 7 tablespoons sugar
  4. 4 egg yolks
  5. 500ml whole milk
  6. 1 drop red food colour (optional)

Instructions

  1. Cut the peaches in half and remove the kernels (seeds). Drizzle generous amount of honey on the peaches, skin side down. Roast the peaches for about 10 minutes.
  2. Crush the kernels in a kitchen towel.
  3. In a saucepan pour the milk and put the crushed kernels in the milk. On a very low heat let the milk simmer for about 10 minutes.
  4. Turn the heat off and let the milk sit aside for 30 minutes and infuse flavor from the peach kernel.
  5. In a bowl take the egg yolks and sugar. Whisk until creamy and pale in color. Take the roasted peaches and remove the skin carefully.
  6. Turn on the heat and let the milk simmer again. Pour some of the simmering milk little by little in the egg mixture through a sieve.
  7. Combine the milk and egg mixture. Then pour all of the milk in the egg mixture through sieve and mix.
  8. Put the mixture again on the heat and stir with a wooden spoon continuously until thick and cream or till it sticks to the back of the spoon.
  9. Once it is thick, turn the heat off. Let the mixture come to room temperature, then pour it in the ramekin or in a glass.
  10. Top it with the honey roasted peach and serve.

"Roast the peaches for 10 minutes". Perhaps something more specific here? Temperature? Broiler? Oven? Also... mention of optional food coloring in the ingredients but nothing in the recipe.
