Ingredients Serving: 4

  1. 4 medium - size ripe bananas
  2. 50 gram custard powder
  3. 20 gram rice flour
  4. 20 gram Refined flour
  5. A pinch of salt
  6. Juice of 1 lemon
  7. 40 gram powdered sugar
  8. oil for frying
  9. Cold water – as required

Instructions

  1. In a medium bowl, combine rice flour, custard powder and salt.
  2. Add enough water to make a smooth batter that is somewhat thick. You want a medium thick consistency. Add zest of 1 lime, juice of half lime & mix well.
  3. Peel the bananas and cut them lengthwise into half & then again breadth wise into halves.
  4. In a deep skillet, heat oil enough for deep frying.
  5. Coat the bananas with refined flour & dust off the excess. Dip the bananas into the batter & slide them slowly & carefully into the hot oil.
  6. Fry them for a minute & turn to the other side. Fry for another minute until they are crisp & golden brown.
  7. Remove with a slotted spoon & place on paper towels to absorb the excess oil.
  8. Arrange them into a stack on a serving plate & sprinkle with a generous amount of powdered sugar.
  9. Garnish with lime wedges & serve immediately.
