ABOUT Vendaikai / Ladies Finger Sambar RECIPE

In sambar, when you add vegetables like drum stick, ladies finger, Radish it enhances the flavour of sambar. It makes you addicted to sambar. Ladies finger sambar is my family's favourite. It goes well with tiffen, rice and roti as well. Try this ladies finger flavoured sambar.

Ingredients Serving: 4

Ladies finger 200 grams
Tamarind lemon size
Toor dal 1/4 cup
Tomatoes 2
Turmeric Powder
Salt 2 teaspoon
Sambar powder 2 tablespoon
Curry leaves
Coriander leaves
For seasoning oil
Mustard seeds
Jeera
Methi
Hing

Instructions

Soak lemon size Tamarind and get the extract
Pressure cook 1/4 cup Toor dal and Tomatoes. Mash it.
Heat oil. Add Mustard
When Mustard cracks add methi, jeera and hing
Add ladies finger and curry leaves. Ladies finger will lose it stickiness when you saute for few minsutes
Add Tamarind extract
Add Turmeric powder and 2 teaspoon salt
Add 2 tablespoon sambhar powder
When it is frothy add mashed Toor dal and Tomatoes
Add coriander leaves
Boil sambar on high flame for 5 minutes
Ladies finger sambar ready to serve
