Ingredients Serving: 4

  1. Cauliflower 250 grams
  2. French beans 1/2 cup
  3. Carrot 1/2 cup
  4. Green peas 1/2 cup
  5. Potato finely chopped 1
  6. Cottage cheese 1/2 cup
  7. Onion finely chopped 1 cup
  8. Onion slices and deep fried 2
  9. Tomato ( finely chopped ) 1 cup
  10. Turmeric powder 1/4 teaspoon
  11. Curd 1/2 cup
  12. Fresh cream 3 tablespoon
  13. Garam masala 1 teaspoon
  14. Butter 2 tablespoon
  15. Kesar dissolved in milk 8 to 10 strands
  16. Ginger garlic paste 2 tablespoon
  17. Red chilly powder 1 tablespoon
  18. Coriander powder 1/2 tablespoon
  19. Salt to taste
  20. Fresh coriander
  21. For Rice
  22. Rice washed and soaked in water 2 cup
  23. Water 6 to 7 cups
  24. Fresh mint leaves 1/2 cup
  25. Coriander green 1/4 cup
  26. Green chillies slits 2
  27. Cloves 2
  28. Green cardamom 1
  29. Cinnamon 1/2 inch
  30. Salt to taste

Instructions

  1. Take a heavy bottom pan add rice with 6 to 7 cups of water
  2. Add salt and all the ingredients mentioned in the rice section
  3. When the rice is 75 percent cooked drain the rice and take out excess of water
  4. Place the rice in a wide platter as they don't stick to one another
  5. Steam all the vegetables in boiling water or microwave it for 10 minutes
  6. Now side by side take a pan
  7. Add oil to it
  8. Then add onion in oil. Sauté it for 2 minutes
  9. Then add ginger garlic paste
  10. when the paste is cooked add red chilly powder,coriander powder,turmeric powder and salt to it
  11. Then add tomatoes and cook it till the tomatoes turn soft
  12. Then add Garam masala
  13. Add curd and stir it continuously
  14. Lastly add fresh cream and fresh coriander
  15. Take a handi
  16. Put the layer of vegetables and then a layer of rice
  17. Top up with some fried onions and some mint leaves
  18. Like wise make layers but ensure that rice must be on top
  19. Add saffron milk at top and butter
  20. Cover the sides of handi with freshly kneaded dough and place lid on top
  21. Place a flat pan on gas and put this handi on top and cook for about 20 to 25 minutes
  22. When cooked switch off the gas and let the handi stay for about 10 minutes
  23. Serve with curd or Papad or Pickles
