ABOUT Veg Kolhapuri RECIPE

Veg Kolhapuri is mixed vegetable,aromatic and spicy flavour curry.Curry is made by coconut,oil seeds and with some garam masala.Roasting of masala gives a unique taste for this.Generally it is popular dish from Maharashtra cuisine and now is often found in almost all over Indian restaurant menus.

Ingredients Serving: 4

  1. 1/2cup cauliflower cut in medium size
  2. 1/2 cup carrot dioganaly cut medium size
  3. 1/2 cup french beans diognaly cut medium size
  4. 1/2 cup potato cut in medium size
  5. 1/2 cup capsicum cut in medium size
  6. 1/2 cup fried paneer cubes
  7. masala for roasting,3-4 red chillies
  8. 1 tsp corriender seeds
  9. 1/2 tsp cumin seeds
  10. 5-6 peppercorns
  11. 2 black and 3 green cardamom
  12. 3 cloves
  13. 1 cinnamon stick
  14. 1 tsp grated coconut
  15. 1 tsp Sesame seeds
  16. 1 tsp poppy seeds
  17. masala for gravy,1 onion nicely chopped
  18. 1 and 1/2 tsp ginger,garlic paste
  19. 1 tsp red chilli powder
  20. 1/2 tsp termeric powder
  21. 2 tomato boiled and make purre
  22. 1/2 tsp Kolhapuri masala
  23. salt to taste
  24. oil for cooking
  25. For tempting and garnish,kashmiri mirch whole
  26. Some makhane
  27. Fresh corriender leaves


  1. Boil water in a pan add salt and all cut except capsicum vegetables,blanched vegetables for 5 minutes.strain hot water and keep the stock for use.
  2. Heat 1 tsp oil in a pan add sesame, poppy, coconut and all roasting masala and roast till pleasant smell comes when done cool,grind and make smooth paste and keep aside it for next step.
  3. Now heat oil in other pan,add chopped onion and saute it till golden brown,add ginger garlic paste and red chilli powder after a minute add termeric powder,when saute add tomato purre when oil comes out add some stock and again cook now add capsicum and salt in it and stir it.
  4. Use vegetable stock when need of water.
  5. When masala saute add roasted and grind masala paste in it and saute it,when saute add blanched vegetables and cook for 5 minutes. When vegetables cook add fried paneer cubes and Kolhapuri masala,cover it again cook for 2-3 min.
  6. For tempting and garnish,heat oil in pan,add makhane and fry till crisp now add red chilli when smell comes pour this oil over the prepared vegetable, sprinkle fresh chopped coriander over this.
  7. Now Veg Kolhapuri is ready to serve ,for more taste serve hot with chapati or butter naan.
