ABOUT Cream of Tomato with Spinach and Pasta RECIPE

This is a very healthy, scrumptious and fulfilling soup. Made with all healthy ingredients. It can be served as an appetizer or a light supper itself.

Ingredients Serving: 8

  1. 8 medium ripened Tomatoes
  2. 1/2 cup boiled Tortellini
  3. 1/2 cup roughly chopped Spinach
  4. 2 tablespoon chopped Basil
  5. 1/2 cup fresh Cream
  6. 1 teaspoon Cumin seeds
  7. 1 inch crushed Ginger
  8. Salt to taste
  9. To Garnish:
  10. Sun dried tomatoes
  11. Freshly ground Black Pepper

Instructions

  1. Pressure cook the tomatoes to one whistle. Blanch them and process the pulp into a smooth paste.
  2. Heat a teaspoon of oil into a large wok. Add cumin, ginger, spinach and basil leaves.
  3. Saute for a minute and then add the tomato puree.
  4. Add 2 cups of water and let it simmer on low heat for 5-6 minutes
  5. Now add tortellini, cream and simmer for another minute.
  6. Once thick and creamy add salt. Garnish with sun dried tomatoes and pepper.
  7. Serve hot.
