Ussually we think what to do with leftover rice. Here is lovely idea for it. I used it in making stuffed Paratha. To make it more healthy I add broccoli and peas to it. You can say it's one pot healthy breakfast meal

Ingredients Serving: 3

  1. Ingredients for dough:
  2. 1 cup of wholewheat flour
  3. 1 tsp of Oil
  4. salt as per taste
  5. Ingredients for stuffing:
  6. 1/2 cup of leftover cooked rice
  7. 1 cup of chopped broccoli
  8. 1/2 cup of fresh or frozen peas ( I have taken frozen one )
  9. 1 small onion
  10. 3 GARLIC CLOVES
  11. Small piece of ginger
  12. 3 green chillies
  13. few curry leaves
  14. 1 tsp of roasted cumin powder
  15. 1 tsp of Red chilli powder
  16. 1/4 tsp of turmeric powder
  17. 1 tsp of chaat masala
  18. 2 tbsp of yogurt
  19. 1 tbsp of oil
  20. 1 Tsp of cumin seeds
  21. 2 tbsp of kasturi methi
  22. 2 tbsp of lemon juice
  23. salt as per taste

Instructions

  1. Method For Dough:
  2. Add wholewheat flour, salt and oil to the bowl and mix it
  3. Add enough water to knead firm but smooth dough. Sprinkle 1/2 tsp of oil on dough and knead again for 3 to 4 minutes. Cover with the lid and keep aside for 30 minutes
  4. Method For Stuffing:
  5. Chop onions, broccoli. Wash curry leaves and keep aside. Wash chillies and remove stem and peel ginger and garlic and keep aside
  6. Add chopped broccoli, curry leaves, chopped onion, chilli, ginger and garlic to the jar of blender.
  7. Blend it to smooth paste, remove in a bowl and keep aside
  8. Add peas and rice to the jar of blender.
  9. Blend it to smooth paste, remove in a bowl and keep aside.
  10. Heat oil in a pan and add cumin seeds and sauté for few seconds.
  11. Slow down the heat and add red chilli powder, turmeric powder, yogurt, cumin powder, chaat masala, kasturi Methi, and salt and mix properly
  12. Add broccoli and peas and rice mixture to it and mix properly.
  13. Cook till water evaporates and it becomes
  14. Keep aside the mixture and let it cool down completely.
  15. Method For Making Stuffed Paratha:
  16. Divide the dough into equal portions and keep aside
  17. Divide the stuffing into equal portion and keep aside
  18. Take one portion of dough and roll it into small round circle.
  19. Place a portion of the rice stuffing in the centre of the circle.
  20. Bring together all the sides in the centre and seal tightly.
  21. Roll out again into a small circle with the help of a little whole wheat flour for rolling.
  22. Heat a non-stick tava (griddle) or frying pan.
  23. Cook the parathas by using little oil, till they turn brown in colour from both the sides.
  24. Repeat 4 to 8 steps with the remaining dough and stuffing to make more parathas.
  25. Serve it with yogurt and garlic chutney
