ABOUT Kucho Nimki(Diamond shape fried salty snacks) RECIPE

Kucho Nimki is a diamond shape fried snacks which is obvious in time of Durga Puja. Kucho means small and nimki means salty snacks.It serves best with sweets in the time of Bijoya Dashami /dussera, after immersion of Goddess Durga in holy river. This nimkis are very easy to make but it is very tasty.

Ingredients Serving: 4

  1. 2 cup maida/ all purpose flour
  2. 1 tbsp kalonji/kalojeera
  3. 2 tbsp vegetable oil
  4. water as needed for making dough
  5. Salt for seasoning
  6. Vegetable oil for frying

Instructions

  1. For making kucho nimki first we start with making the dough.
  2. In a big bowl add flour, salt, kalo jeera and oil. Now start mixing it, we called it mayan. This process make nimkis more crunchy and fluffy. After 5 minutes add water and make a medium dough not very soft or hard.
  3. Cover it up and rest it for 20 minutes
  4. Make 2 balls out of that dough, with the help of rolling pin flatten it in medium thickness not very thin. With a knife cut them in diamond shape.
  5. Heat oil in a frying pan.Fry nimkis in low flame to make it crunchy.
  6. Serve hot or store them in an airtight container after it gets cold.
