ABOUT Carrot Ginger Soup RECIPE

A sweet tangy soup with a dash of coconut milk.

Ingredients Serving: 4

  1. Carrots 1/2 kg
  2. Ginger piece of 3 Inches
  3. Coconut milk- 1 cup
  4. Water- 3 cups
  5. A handful of basil leaves, washed and drained
  6. Onion : 1, peeled and cut
  7. A Few Peppercorns
  8. Salt to taste
  9. Oregano 2 tbsp

Instructions

  1. Wash and peel the carrots, onion and half of the ginger. Reserve the other half of the ginger to garnish.
  2. In a pressure cooker, add in the bay leaves, diced vegetables and ginger. Then add in 2 cups of water, salt and peppercorns. Let it pressure cook.
  3. Let it cook till 2 whistles blow, then turn off the stove and let the pressure release itself.
  4. Once cooled, blend this mixture with the help of a hand blender.
  5. Next pour in 1 cup of coconut milk with 1 cup of water. Mix it well to get a smooth consistency.
  6. Then add the basil leaves and the reserved ginger. Let it boil and keep a check on the consistency.
  7. Serve it piping hot.
