Poffertjes came out perfect! Ever since then these cute baby pancakes are a favorite of my son also. Poffertjes are just like the normal pancakes that we all generally know, the difference being the pan they are made in. Also for a fusion twist, I have served poffertjes with rabdi.

Ingredients Serving: 4

  1. All purpose flour 1 cup
  2. Sugar 2 tablespoon
  3. Baking powder 1 teaspoon
  4. Salt 1/8 teaspoon
  5. Milk 1 cup
  6. Egg 1
  7. Melted butter 2 tablespoons
  8. Vanilla essence 1/2 teaspoon(optional)
  9. Cardamom powder 1/4
  10. Cinnamon powder 1/4 teaspoon
  11. Fennel powder 1/4 teaspoon
  12. Oil/butter for greasing appe pan
  13. Homemade rabdi
  14. Few strawberries and rasberries for garnish

Instructions

  1. In a bowl sift together flour, baking powder , sugar, salt, cinnamon powder, cardamom powder and fennel powder.
  2. Beat milk and egg in a separate bowl
  3. Whisk in the melted butter.
  4. Pour the wet mixture into dry and whisk gently.
  5. Keep aside for 15 -20 minutes
  6. Spray some oil in a appe/paniyaram pan
  7. Pour some batter with a ladle
  8. Add teaspoon of the batter in each cavity / indentation
  9. Turn the poffertjes around as soon as the bottom has set
  10. Serve with strawberries,rasberries or chocolate sauce.
  11. I served with rabdi. Tasted great!
