ABOUT Lau Khosha Bata (Bottle Gourd Peel Chutney - Bengali Style) RECIPE

This is a traditional Bengali homemade style chutney made out of Bottle Gourd Peels. They contain the most nutrients and it tastes simply delicious. So come lets relish this simple delicacy that is bursting with flavours along with plain steamed rice or chapattis. It also goes well as a spread on parathas and toast

Ingredients Serving: 3

  1. 1 cup Peel of lauki (Bottle Gourd), boiled & water drained
  2. 3 garlic cloves
  3. 1/2 cup coriander leaves
  4. 2 green chilies
  5. 1 tbsp. mustard oil
  6. 1/2 tsp. kalonji
  7. 1 dry red chili, broken into half
  8. 1 onion, chopped
  9. 1/2 tsp. turmeric powder
  10. salt to taste

Instructions

  1. Grind the boiled peel, coriander leaves, garlic and green chilies to a past. Keep aside. Heat oil in a pan and temper with the kalonji and red chili. Saute for a few seconds.
  2. Add the onion and fry till light brown. Then add the ground paste, salt and turmeric powder.
  3. Stir fry on low flame till the oil starts to separate. Enjoy with plain steamed rice or chapattis. It can be also had as a spread on parathas and toast.
