Sicilian style pasta that's wholesome and vegetarian.

Pasta Alla Norma

Ingredients to make Pasta Alla Norma

  • 400 gms Penne Pasta
  • 400 gms tomatoes, blanched and pureed
  • 1 medium Eggplant/Aubergine cubed
  • 1 medium onion
  • 2-3 tbsp olive oil
  • Ricotta salata cheese, grated(or use Feta)
  • Some fresh basil leaves
  • Salt and black pepper to taste

How to make Pasta Alla Norma

  1. Cook the pasta first in a large pot of boiling, salted water.Drain just before "al dente"stage and keep aside.
  2. In a heavy saucepan heat the oil and fry the eggplant cubes till golden, drain and keep aside.
  3. Using the same oil in the pan saute the onions, then add the tomatoes. Season and cook till thick.
  4. Add the egg plant and pasta and let cook till pasta is cooked through. Add basil leaves and transfer to a serving bowl.
  5. Grate cheese on top and serve hot.
