ABOUT Khao Pad (Thai Fried Rice) RECIPE

This is a very famous rice dish of Thailand with loads of flavours of different herbs and spices. The spices along with chicken, egg and a drizzle of lime juice makes an exotic platter to enjoy. It is a whole meal also because it contains rice, vegetables, chicken and egg.

Ingredients Serving: 4

  1. Cooked rice 1 1/2 cups
  2. Chicken sliced 400 gms
  3. Corn flour 1 table spoon
  4. 2 eggs beaten
  5. Finely chopped garlic 1 table spoon
  6. Onion slice 1/2 cup
  7. Oil 5 table spoon
  8. 1/4 cup Thai chili pepper
  9. 1/2 tea spoon Thai pepper powder
  10. 2 table spoon fish sauce
  11. 1 table spoon soy sauce
  12. Salt to taste
  13. Lime juice 1 table spoon
  14. Sugar 1 tea spoon
  15. Tomato chopped
  16. Green onion chopped
  17. Coriander leaves handful for garnishing

Instructions

  1. Mix the chicken with soy sauce and cornflour and keep aside for 10 minutes.
  2. Fry egg and cut into pieces.
  3. Heat oil in a pan.
  4. Add chopped garlic. Saute until nice aroma comes out.
  5. Add chicken. Stir fry for 10 minutes.
  6. Add onion and chili pepper.
  7. Add tomato, green onion and egg.
  8. In a different wok add fish sauce, salt, sugar, lime juice, thai pepper powder and rice.
  9. Mix them together.
  10. Add the vegetable and chicken in rice.
  11. Again mix until all the ingredients are well combined.
  12. Serve with some lemon wedges and cucumber slices.
