Ingredients to make IDLY BONDA / IDLY PAKODA / IDLY DUMPLINGS

  • 7-8 idly
  • 3 potates boiled and mashed
  • 1 chopped onion
  • 1-2 Green Chilies chopped
  • 1 tbsp coriander leaves finely chopped
  • 1/4 tsp mustard seeds
  • pinch of hing
  • 2 tea spoon red chilli ,
  • 1/4 tsp turmeric powder,
  • 1/2 tsp garammasala
  • 1/2 tsp aamchoor
  • 1 tsp sounf
  • 2 cup besan
  • 2 tbsp maida
  • salt ...as per taste
  • 1 tsp lemon juice
  • oil for frying

How to make IDLY BONDA / IDLY PAKODA / IDLY DUMPLINGS

  1. Add salt, chilly powder, garam masala,aamchoor, coriander, and green chilies to the mashed potatoes and mix well.
  2. Heat oil in a frying pan.
  3. Add the mustard seeds and hing.
  4. Allow the mustard seeds to splutter .
  5. Add the chopped onion and saute till they are translucent and get softened.
  6. Add the turmeric powder and the potatoes to this mixture stir well.
  7. Make small to medium sized balls from this mixture flatten these balls .
  8. In a bowl take besan and maida add turmeric powder, little salt and chili powder sounf lemon juice to it.
  9. Add little water bit by bit and mix very well and make a thick flowing batter .
  10. Now slit the idlies from the center.
  11. Spread evenly a ball of potato mixture on one half of the idly and cover with the other half. Insert tooth pick .
  12. Heat oil for deep frying in a kadai or pan.
  13. Dip the idlies in the batter and deep fry them till golden brown
  14. Cut it in half and serve with chutney or tomato ketchup.

My Tip:

You can use leftover idly in it .
