Ingredients Serving: 2

  1. 1 kg John Dory head and fins removed
  2. Chopped tomatoes for side salad
  3. Broccoli florets for side salad
  4. 1/2 cup Chopped dill leaves coriander leaves
  5. 4 tbsp Olive oil
  6. 2 tsp Coriander seeds
  7. 2 Garlic cloves crushed
  8. Grated lemon and orange peel
  9. Salt and pepper to taste


  1. Roast the coriander seeds, then grind it. Add crushed garlic clove, 1/4 cup coriander and dill leaves, grated orange and lemon peel, salt and pepper.
  2. Slit the fish on both sides, rub the dry marinate prepared onto the fish, massaging well. Place in a dish , cover and refrigerate the fish overnight to marinate.
  3. Preheat the grill on medium heat. Drizzle the marinated fish with oil and barbeque until its cooked from both sides, about 15 mins.
  4. Place the grilled fish on a platter, garnish with dill leaves. Place chopped tomatoes and broccoli on the side for salad.
  5. Serve immediately.
