ABOUT French Doughnuts or Beignets(Eggless) RECIPE

Beignet or fritter is the French term for pastry made from deep fried choux pastry. It is commonly known in New Orleans as a breakfast served with powdered sugar on top. They are eaten fresh with a cup of hot tea or coffee.

Ingredients Serving: 4

  1. Maida or Flour – 1 3/4th cup(Small) + 2tbsp for flouring work surface
  2. Warm Milk – 3tbsp
  3. Sugar – 1 tbsp + a pinch for Yeast mixture
  4. Castor sugar – 1tbsp
  5. Salt - 1/4th tsp
  6. Baking soda – ½ tsp
  7. Dry yeast – 1 ½ tsp
  8. Curd – 2 tbsp or 1/4th cup + 2tbsp warm water
  9. Oil for frying

Instructions

  1. Dissolve sugar in a milk (35-40-degree c); add dry yeast. Keep aside for 5 minutes.
  2. Sift Maida, baking soda together. Add salt. Mix well. Keep aside.
  3. In another bowl take curd, water and sugar. Whisk well till sugar dissolves. Add milk, yeast mixture. Whisk Well.
  4. Add dry ingredients, knead it into a soft dough. It will take 7-8 minutes. Dough would be little sticky. Grease with little oil, Cover with plastic wrap and keep aside for 1 hr at warm place. Allow dough to expand.
  5. Lightly flour the work surface. Take dough out and gently flatten with fingertips.
  6. Sprinkle some flour on top and roll it into a 3mm thick circle. Rest it for 2-3 minutes
  7. Take pizza cutter and cut it into a 1 ½ inch or 2inch squares or any desired shape.
  8. Heat oil in a heavy bottom wok or pan. Deep fry beignets until they puff up and are golden brown from both the sides.
  9. Drain off and remove it on kitchen towel.
  10. Dust them with castor sugar. Serve hot with Tea or coffee.
