  • 1 cup boiled chhole
  • 2 tbsp curd
  • 3 tbsp oil
  • 1-2 bay leaf
  • 1 star anise
  • 2 cloves
  • 2 tsp red chilly powder
  • 1 tsp turmeric powder
  • 1 tsp corriender powder
  • 1 tsp cumin powder
  • salt to taste
  • For gravy
  • 2 tbsp oil
  • 2 tbsp water
  • 2 Medium sized chopped onion
  • 2 tbsp ginger chilly garlic paste
  • 2 medium sized chopped tomato
  • FOR GARNISH
  • corriender leaves
  • ginger pieces

How to make Dhaba Style Chole Masala

  1. SAUTE 2 ONIONS IN 2 TBSP HOT OIL TILL TRANSLUCENT
  2. ADD 2 TBSP CRUSHED GINGER- GARLIC-CHILLI
  3. ADD 2 TOMATOES & 2 TSP CHILLI POWDER
  4. ADD 1 TSP EACH OF TURMERIC & CORIANDER
  5. ADD 1 TSP ROASTED CUMIN, SAUTE TILL MASALA IS COOKED
  6. COOL & GRIND WITH 2 TBSP WATER INTO A SMOOTH PASTE
  7. ADD 2 BAY LEAVES, 1 STAR ANISE, 2 CLOVES & THE MASALA PASTE IN 3 TBSP HOT OIL
  8. ADD SALT TO TASTE & 2 TBSP CURD
  9. ADD 1 TSP GARAM MASALA & 250 GMS BOILED CHOLE, COVER & COOK FOR 3-4 MINS
  10. GARNISH WITH FRESH CORIANDER & GINGER, SERVE HOT
