ABOUT Mint Rice Flour Chakli RECIPE

Chakli is a crunchy, spiral shaped, savory snack famous all across India. Typically this is made from a variety of flours which may be only rice flour or rice flour with gram flour or rice flour with black gram / urad dal flour etc.

Ingredients Serving: 6

  1. Rice flour 1 cup
  2. Mint leaf (tightly packed) ½ cup
  3. Sesame seed ½ teaspoon
  4. Chili flake 1 & ½ teaspoon
  5. Butter ¼ cup
  6. Water 1 cup
  7. Oil For deep frying
  8. Salt As needed

Instructions

  1. First thoroughly clean mint leaves (only the leaves part).
  2. Then make a paste of mint leaves in a blender along with little amount of water.
  3. Do not add much water, even prefer not to use water to make the paste.
  4. In a mixing bowl, take rice flour.
  5. Add the mint paste and mix well, so that a crumble texture will form.
  6. Next add sesame seeds, chili flakes, butter and salt.
  7. Mix well.
  8. Add boiled water to this mixture.
  9. Give a quick mix using a spoon and keep aside covered for 15 to 20 minutes.
  10. Then knead it to make a smooth dough without any cracks.
  11. Take a well greased chakli mold attached with star shaped hole.
  12. Heat oil in a deep pan on medium heat.
  13. Stuff a portion of the dough inside the mold and slowly press in circular motion on a plate lined with plastic sheet till the desired spiral size is reached.
  14. Make 4 to 5 number of circular shapes at a time.
  15. Carefully slide each one onto the hot oil for deep frying
  16. Allow them to cook over low to medium heat on both sides completely without changing it’s color.
  17. Drain out the chaklis onto paper napkins to remove excess oil.
  18. Repeat to make chaklis from rest of the dough.
  19. Allow to cool completely, then munch these crispy mint flavored chaklis or store in an airtight container for later !
