ABOUT BRINJAL AND GARLIC DIETRY GRAVY RECIPE

This dietry gravy is mainly given to the lactating mothers in Tamilnadu. It's a Traditional recipe of this State. More garlic helps and soothes after delivery. No chilli powder is added. Peppercorns is the main ingredient to give mild spiceness.

Ingredients Serving: 3

  1. Garlic 3 whole
  2. Brinjal 7
  3. Shallots 100gms
  4. Tomato 1
  5. Tamarind 1cup
  6. Turmeric powder 1/2 teaspoon
  7. Mustard seed 1/2 teaspoon
  8. Fennel seed 1/4 teaspoon
  9. Cumin 1/2 teaspoon
  10. Pepper corns 4teaspoon
  11. Gingely oil 4tablespoon
  12. Salt to taste
  13. Curry Leaves handful

Instructions

  1. Slit brinjal into four leaving the cap intact.
  2. Dry roast pepper, cummin and fennel. Powder in a mixer.
  3. Heat oil in a pan and add mustard seed to it. Let it splutter.
  4. Add garlic cloves and brinjal to it.
  5. Saute well in oil. Let brinjal and garlic cook in oil.
  6. Add 3 tablespoon of thick tamarind water to it.
  7. Add turmeric, ground powder and tumeric to it.
  8. Add 1/2 cup of water to it.
  9. Simmer it for 20minutes.
  10. Cook till oil floats above.
  11. Add curry leaves to it. Ready to serve.
