My kids love laughing cow cheese in their soup, the addition of cheese gives an excellent smooth and creamy texture to this simple soup.

Ingredients Serving: 4

  1. 3 cups Vegetable Broth
  2. 2 cups Butternut squash (chopped)
  3. 1 onion (chopped)
  4. 2 garlic cloves
  5. 1/4 tsp cumin
  6. salt to taste
  7. pepper powder as per taste
  8. 4 Laughing cow cheese slices


  1. Take the chopped butternut squash, chopped onion, chopped garlic cloves, cumin with enough salt and water. Cook everything on medium high flame for a few minutes, simmer for 10 minutes until the veggies get cooked well.
  2. Add some pepper powder and put of the stove. Add the laughing cow cheese to the cooked vegetables.
  3. Blend the soup with a hand blender until it turns creamy. Serve hot.
