ABOUT Methi matar malai RECIPE

This is a north indian dish made from fenugreek leaves and green peas in a white gravy.This rich and creamy dish is loved by everyone as the bitterness of fenugreek leaves is covered with the sweetness from cream and onions.

Ingredients Serving: 4

  1. Fenugreek leaves-2 cups(tightly packed)
  2. Green peas-3/4 cup
  3. Onions-2
  4. Cashews-12-15
  5. Ginger-1 inch
  6. Green chilli-2
  7. Garlic-8 cloves
  8. Oil-1 tbsp
  9. Cumin seeds-1 tsp
  10. Asafoetida-1/4 tsp
  11. Cloves-2
  12. Green cardamom-2
  13. Cinnamon-1 piece
  14. Garam masala-1 tsp
  15. Turmeric-1/4tsp
  16. Coriander powder-1 tsp
  17. Sugar-1/2 tsp
  18. Lemon juice-1/2 tsp
  19. Fresh cream-2 tbsp

Instructions

  1. Soak cashews in hot water for 10 minutes.
  2. Wash and chop fenugreek leaves.
  3. Boil green peas with a pinch of salt and sugar.You can microwave also for 4 to 5 minutes.
  4. Take onions,ginger,garlic,green chillies and cashews in mixer.
  5. Make a smooth paste.
  6. Now take a pan and add oil.Add cumin seeds and dry spices like cloves,cinnamon,cardamom to hot oil.Saute for a minute.
  7. Add asafetida.Then add onion and cashews paste.Saute till this paste starts leaving oil.
  8. Add turmeric,salt,garam masala and mix.
  9. Add chopped fenugreek leaves and salt.
  10. Cover and cook for 5 minutes till the leaves are cooked.
  11. Then add sugar, lemon juice and boiled peas.Also add cream.
  12. Mix everything well.If needed add 2 spoons of milk to adjust consistency.Cover and cook for a minute.Serve hot with roti, paratha,naan or kulcha.
