Roast Potatoes

Ingredients to make Roast Potatoes

  • 1 kg Fresh potatoes
  • 100ml olive oil
  • 2-3 tbsp Plain flour
  • Fresh rosemary for garnishing
  • salt as required
  • Sea salt( if available, for sprinkling on top)

How to make Roast Potatoes

  1. Peel potatoes and cut into cubes. Take a large pan of water and add the potatoes, add salt according to taste and let water come to a boil, cover and cook for 5 minutes then drain off water.
  2. Preheat oven at 200 deg. C. Pour out oil in a large roasting pan(or two).Let it heat up in the oven.
  3. Sprinkle the flour on the potatoes in the colander and shake well so that they are all evenly coated.
  4. Spread out the potatoes on the roasting pan and toss to coat with the oil.Sprinkle a little sea salt on top.
  5. Roast on one side, then turn and roast on other side every 15 minutes or till golden and evenly roasted(approx.1 hour)
  6. Taste and adjust salt. Sprinkle with fresh rosemary and serve hot.

My Tip:

Add some freshly cracked black pepper on top.
