ABOUT Mint chutney RECIPE

Mint chutney is prepared using fresh mint leaves .You can call this chutney as `All in one chutney´ because this chutney can be served as accompainment for pakodas,dosas,idli,tandoori snacks and you can even mix in rice.

Ingredients Serving: 3

  1. One and half cup fresh mint leaves
  2. One teaspoon cumin seeds
  3. One teaspoon split black gram
  4. Few peanuts
  5. One tablespoon sesame seeds
  6. One tablespoon coriander seeds
  7. Two dry red chillies
  8. Salt as per taste
  9. Half teaspoon sugar
  10. One teaspoon tamarind
  11. Cooking oil

Instructions

  1. Take a pan add few teaspoon oil. When oil is heated add teaspoon cumin seeds and teaspoon split black gram
  2. After black gram turns little brown add few peanuts and tablespoon coriander seeds and saute for few seconds
  3. Next add 2 dry red chillies and a tablespoon sesame seeds and saute for few minutes on low flame
  4. Finally add one and half cup mint leaves and roast for few minutes
  5. Soak a teaspoon tamarind in little water.Microwave for few seconds and extract juice
  6. Cool all sauted ingredients and transfer to blender
  7. Next add extracted tamarind juice to blender
  8. Finally add salt as per taste,half teaspoon sugar to blender and blend by adding little water to paste
  9. After preparing chutney final step is tempering.For tempering take little oil in pan and add cumin seeds
  10. When they splutter add half teaspoon split black gram and few curry leaves
  11. Finally transfer tempering to blended chutney and mix.You can add little water and mix if chutney is too thick
  12. Garnish with mint leaves and serve mint chutney with rice or any dosa,idli or chapathi
