ABOUT Strawberry Ice Cream RECIPE

Ingredients Serving: 5

  1. Sugar 250 gms
  2. Fresh cream 250 gms
  3. Full fat milk 500 ml
  4. G.M.S 2 tbsp
  5. C.M.C 1/2 tsp
  6. Fresh Strawberry Puree 1/2 to 1 cup
  7. Custard Powder 2 to 3 tbsp
  8. Liquid glucose 10 gms

Instructions

  1. Mix custard powder, G.M.S and C.M.C in a little milk and keep aside.
  2. Boil the rest of the milk and liquid glucose and strawberry puree in a heavy bottomed pan. After the first boil, keep on medium heat.
  3. Add sugar and the above made custard powder mixture, stirring continuously.
  4. Keep boiling for 4 to 5 minutes, stirring continuously, till it becomes a very thin custard and coats the spoon.
  5. Freeze the custard for 3 to 4 hours, turning the fridge to its coldest till set.
  6. Check after 3 to 4 hours if the custard is frozen and is ready to be beaten. If it becomes hard and frozen, proceed further.
  7. Cut the frozen custard into small cubes in a big pan and beat till fluffy and smooth along with fresh cream.
  8. Freeze till firm for at least 5 hours or overnight.
