ABOUT Spinach Biryani RECIPE

This is a wholesome and a nutritious meal with the goodness of spinach. Very easy and simple to make, they can be had with raita, pickles or just plain roasted papad. Do try this delicious one-pot meal when time is a constraint and when you want something healthy.

Ingredients Serving: 3

  1. 1/2 cup Basmati rice, soaked for 1/2 hour
  2. 3 tbsp ghee
  3. 1 inch cinnamon stick
  4. 2-3 green cardamoms
  5. 4-5 cloves
  6. 1 tsp. cumin seeds
  7. 2 bay leaves
  8. 1 onion, sliced
  9. 1 small bunch spinach, washed & roughly chopped
  10. 1 inch ginger grated
  11. 2-3 green chilies
  12. salt to taste
  13. 1/2 tsp. turmeric powder
  14. 1 tsp. garam masala powder
  15. fried onions, tomato wedges, lemon wedges & fried cashews to garnish (optional)

Instructions

  1. Grind and make a puree of spinach, ginger, green chilies and 1/4 cup water. Keep it aside. Drain excess water from rice and keep it aside
  2. In a pan, Heat the ghee and temper with bay leaves, cinnamon, cardamoms, cloves and cumin seeds. saute for a few seconds until aromatic.
  3. Add the onion and fry till light brown. Now add in rice and saute for 1-2 minutes.
  4. Add in pureed spinach, salt, turmeric powder and garam masala powder; continue to saute for another 1-2 minutes.
  5. Add 1.5 cups water and pressure cook the rice for 1-2 whistles. Garnish with fried onions, tomato wedges, lemon wedges and fried cashews. Serve hot with some raita, pickle or papad.
