ABOUT Green Moong Spinach Curry RECIPE

Moong beans been a part of traditional Ayurvedic diets in India, an excellent source of protein for vegetarians. When these mighty beans are combined with spinach the benefits become multifold. Lasooni Dal Palak is an absolute winter delight oozing out that strong garlicky flavor in a fragrant ghee Tadka garnished with Indian Garam Masala along with the hot rotis.

Ingredients Serving: 5

  1. 1 cup split Green Moong Beans(Green Gram), washed and drained
  2. 1 ½ cup chopped spinach
  3. 1 large onion finely chopped
  4. 1 large tomato chopped
  5. 2- 3 green chilies
  6. 6-7 chopped garlic cloves
  7. ½ tsp. Turmeric powder
  8. 1 ½ tsp Coriander powder
  9. ½ tsp Red chili powder
  10. 1 tsp Garam Masala
  11. ¼ tsp Asafoetida
  12. 1 tsp Cumin seeds
  13. 1 - 2 tbsp ghee/oil
  14. Salt to taste

Instructions

  1. Pressure cook Green Moong Beans, spinach, tomatoes, salt and turmeric with 5 cups of water. Cook until Moong is done. It usually takes 10-15 minutes on medium flame.
  2. For Tempering - Heat Ghee in a pan, add cumin seeds,green chilies, hing & saute for a minute.
  3. Add chopped garlic, saute until strong aroma of garlic oozes out. Add in chopped onions and saute until translucent .
  4. Add coriander powder, red chili powder, garam masala and mix well.
  5. Add this tadka (tempering) to the prepared Moong Beans and mix well.
  6. Garnish with fresh coriander and serve hot with steamed rice/ rotis/naan
