Zucchini Crispy thins are a perfect blend of taste with health. Zucchini is one of the very low calorie vegetables; provide only 17 calories per 100 g. Its peel is a good source of dietary fiber that helps reduce constipation & offers some protection against colon cancers. Zucchini is well known to reduce weight.

Ingredients Serving: 4

  1. 2 zucchini’s
  2. 2 eggs
  3. 1/2 cup bread crumbs (or seasoned breadcrumbs if available)
  4. 1 tbsp. Parmesan Cheese
  5. 1 tsp garlic Powder
  6. 1/2 cup Low-Fat Cottage Cheese
  7. 1/4 cup Low-Fat Sour cream
  8. 1 tsp Dried fenugreek Herb (or Italian seasoning)
  9. 1/2 tsp salt


  1. Preheat the oven to 200 deg .Slice the zucchini’s in half and then slice each half lengthwise into 4-5 thin strips. Two Zucchinis will easily give you around 18-22 strips.
  2. Beat the eggs in a small bowl. Mix the breadcrumbs, parmesan Cheese, garlic powder, salt, and Dried fenugreek leaves (or Italian Seasoning) in a plate and mix them gently with the help of a fork.
  3. Line a baking tray with the parchment paper or aluminum foil.Take one zucchini strip each time and dip the zucchinis into the eggs and roll over bread crumbs. Place them on baking tray
  4. Bake for 15 minutes and then flip the side and bake for another 10-12 minutes until crispy on both sides.
  5. To make the Low-Fat Creamy Cheese dip: Blend 1/2 cup of low-fat cottage cheese and 1/4 cup of low-fat sour cream. Serve hot Zucchini Crispy Thins with this dip
