ABOUT Ultra Spongy Dark Chocolate Coffee Cake RECIPE

This cake is dark, moist, rich and incredibly decadent. The Nescafe instant coffee I used blended amazingly well with Hershey’s cocoa to create the most intense and delicious chocolate cake anyone could hardly resist.

Ingredients Serving: 4

  1. 1 ¼ cups Powdered sugar
  2. 1 ¼ cups all-purpose flour
  3. 3/4 cup unsweetened dark cocoa powder
  4. 1 ½ tsp baking powder
  5. ½ tsp Kosher salt
  6. 3 eggs
  7. 1/2 cup buttermilk
  8. 1 1/2 tbsp instant coffee
  9. 2 sticks unsalted butter (200 gms)
  10. 2 tsp vanilla extract

Instructions

  1. Preheat Oven to 180 . Line up cake mold with parchment paper or grease cake mold
  2. In the mixing bowl, Sieve and combine sugar, flour, cocoa, coffee, baking powder and salt thoroughly
  3. In a separate bowl, whisk beaten eggs, buttermilk, butter and vanilla nicely. Add the wet ingredients to dry ingredients and whisk well to create air
  4. Pour the batter into prepared pan.Bake for 30 to 35 minutes or until wooden toothpick inserted in center comes out clean.
  5. Allow it to Cool for 10 minutes; remove from pan to wire racks. Cool completely. Cut slices and Serve.
