Manicotti is a dish of great comfort. It’s a nice, no-fuss recipe that everyone seems to love. This is perfect as a main dish for a quick dinner, party, or potluck! Manicotti when paired with a savory filling highlighted by the tang of fresh ricotta, a crunch of onion, an aroma of strong garlic flavor, the richness of marinara sauce, and the brightness of spinach gets you a winning dish.

Ingredients Serving: 6

  1. 1 onion chopped
  2. 2 Cloves Garlic, Minced
  3. 2 tbsp Olive Oil
  4. 21/2 Cups Fresh Ricotta Cheese (or cottage cheese)
  5. 4 cups Spinach finely chopped
  6. 1/2 Cup Shredded Mozzarella Cheese
  7. 14 Manicotti Shells
  8. 1 lt jar marinara sauce
  9. 1/2 cup water
  10. Salt & Pepper to taste

Instructions

  1. Drain and Squeeze excess water from Spinach
  2. For the Stuffing:In a heavy saucepan, heat the olive oil and saute the garlic until fragrant.Add the onions, saute until translucent Add spinach, salt and pepper. Mix well, saute until spinach is tender
  3. In a mixing bowl , Mix spinach mixture and Ricotta cheese. Stuffing is ready
  4. For the Pasta:Preheat oven to 180 degrees.
  5. Cook the manicotti shells in salted, boiling water as per the directions mentioned in the package. Drain the shells and drop into a bowl of cold water.
  6. Drain the shells and pat dry with a kitchen towel.Mix marinara sauce with water in separate bowl ,add water. Season with little salt and pepper.
  7. Spoon a half cup of sauce into the bottom of a large baking pan and spread evenly.Fill ziplock bag with the stuffing mix and cut at end.
  8. Holding the shell, squeeze the filling into the shell. Place the shells in baking pan
  9. Sprinkle mozzarella cheese on top of the shells. Bake the pasta covered with aluminum foil for 25 minutes, then remove the cover and bake for another 10 minutes. Serve hot
