Chocolate Truffle Cake

Ingredients Serving: 6

  1. 11/4 cup Maida
  2. 1/4 cup Cocoa powder
  3. 1/2 Cup butter
  4. 1/4 Cup Sugar
  5. 1/2 tsp Baking Soda
  6. 1 tsp Baking Powder
  7. 5 tbsp Condensed milk
  8. 1/2 Cup Milk
  9. 1 tsp Vanilla extract
  10. 1 tsp Coffee powder
  11. 200 gm sugar
  12. 200 ml water
  13. 500 gm dark chocolate
  14. 250 gm heavy whipping cream
  15. 2 tbsp butter

Instructions

  1. For the Cake: Sieve the dry ingredients in a bowl twice
  2. In another bowl cream together butter and sugar
  3. Add condensed milk to this butter mixture and cream it well
  4. Add vanilla extract and coffee powder to milk and mix it well
  5. In to the butter mixture mix dry and wet ingredients in batches
  6. Preheat the oven to 180, line cake mould with baking paper
  7. Pour mixture in cake tin and bake for 35 - 40 min until done
  8. For the truffle: Chop dark chocolate and keep in a bowl. Melt butter and boil cream in a saucepan and pour over the chocolate. Whisk till all the chocolate dissolves.Allow to cool
  9. For sugar syrup: Boil water and sugar to make a sugar syrup. Strain and keep aside to cool.
  10. Assembling the cake: Cut the cooled sponge in three layers. Take one layer on a cake board. Brush it with sugar syrup. Apply the truffle. Repeat the process with the remaining layers of sponge. Finally finish the top and sides of the cake with truffle. Allow the truffle to set.
  11. Finally melt the truffle and pour over the cake. Decorate with chocolate shavings..
