Ingredients Serving: 4

  1. Spinach 250 grams
  2. 1 inch Ginger
  3. Garlic cloves 6
  4. Green chilies 6
  5. Prawns 600 grams
  6. Rice 700 grams
  7. Coriander and Cumin powder mix - 1 tbsp
  8. Biryani Masala 1 tbsp
  9. Fresh Coriander and mint leaves 1/2 cup
  10. Yogurt 1/2 cup
  11. Oil 4 tbsp
  12. Ghee 1 tbsp
  13. Salt as required
  14. Turmeric 1/4 tsp
  15. Chili powder 1/2 tsp
  16. Water 1400 ml for cooking
  17. Fried Onions 1 tbsp
  18. Saffron/ red food colour
  19. 1 bay leaf
  20. 3-4 green cardamom
  21. 1 tsp cumin seeds
  22. 1 star anise
  23. 1 inch cinnamon
  24. 4-5 cloves
  25. 1 javitri
  26. 1/2 tsp fennel seeds

Instructions

  1. In a pan, saute spinach until wilted
  2. Blend Spinach with ginger, garlic and green chili. keep it aside
  3. Clean and soak rice for about 1 hr , then drain excess water
  4. In a pan, heat oil and add prawns, salt, turmeric, coriander and cumin powder, fry for 10 mins and keep it aside
  5. In the same frying pan, add 2 more tbsp oil and add spinach puree and yogurt, Biryani powder, 1/4 cup water and cook for 2mins then add prawns
  6. Mean while boil water for rice with whole biryani spices, 1tbsp oil, and salt. Once water starts boiling, add rice and cook until 90% done
  7. Add this rice on top of the prawns and spinach puree
  8. Sprinkle chopped fresh Coriander, mint leaves, fried onions, saffron milk, 1 tbsp ghee/ oil
  9. Close the lid and cook on low flame for about 15 mins then turn off the flame, leave it for 5 mins. Serve it hot
