Hariyali Pulao

Ingredients to make Hariyali Pulao

  • 2 Cups Basmati rice
  • 1/2 Cup curd (optional)
  • 2 onions finely chopped
  • 2-3 Green Chilies chopped (adjust)
  • garlic-ginger paste 1 tsp
  • ghee 4-5 tbsp
  • 1 bowl of vegetables ( Chopped and blanched beans, boiled peas , capsicum chopped)
  • spring onion -2
  • spinach - 250 gms blanched and pureed
  • salt as per taste
  • Garam masala 1tsp
  • cumin seeds 2 tsp
  • pepper 1/2 tsp
  • Kasuri methi 2 tbsp
  • 1 tbsp oil

How to make Hariyali Pulao

  1. Cook rice in 4 cups water and allow to cool
  2. Heat oil & ghee in deep bottom pan. Splutter cumin seeds
  3. Add ginger garlic paste and chopped chilies, saute until raw aroma goes away
  4. Add chopped onions, saute till golden brown
  5. Add green vegetables n saute them for 3-4 minutes
  6. Add Spinach puree , salt, pepper ,garam masala and kasuri methi. Mix well
  7. Add curd for tangy taste and gently mix
  8. Finally add Rice and mix well. Cover the lid and cook on low flame till all the flavors infuse into rice.
  9. Switch off the Gas and let the pan remain covered for 10 mins
  10. Open the lid and Sprinkle green part of spring onion
  11. Serve hot with bottle gourd Raita
