ABOUT Bhendi Kokum Stir Fry RECIPE

In Maharashtra, Bhendi is prepared on a regular basis in every household. Bhendichi bhaji, kokum bhendi, dahi bhendi, masala bhendi, bhendi chat, bharleli bhendi are the dishes which we regularly cook in our house. This is traditional Maharashtrian recipe which is been taught to me by my granny. Prepared using few ingredients, tastes awesome.

Ingredients Serving: 4

  1. Ladies Fingers/Okra/ Bhendi– 250gms
  2. Kokum – 5-6 pieces
  3. Medium sized Onion finely chopped -1
  4. Garlic cloves crushed– 3-4
  5. Green chili slit– 2-3
  6. Oil – 2tbsp + 1tbsp
  7. Salt - as per taste
  8. Coriander powder - 1/2 tsp
  9. Grated coconut – 1.5 tbsp

Instructions

  1. Wash Ladies Fingers, pat dry with kitchen towel, thinly cut them into 1/2" long pieces.
  2. In nonstick pan, heat 2 tbsp. oil. Add chopped lady’s fingers or Okra, Kokum pieces and stir fry on low flame for 10-12 minutes or until it becomes soft, brownish and little crisp. Stir them occasionally to avoid burning.
  3. Remove it on plate and in the same pan, heat remaining oil. Add chopped onion and cook till translucent and bit crispy.
  4. Add crushed garlic and slit green chili. Cook till raw aroma goes away.
  5. Add Coriander powder. Mix well.
  6. Add pre-cooked Ladies Fingers, salt, cook for 2-3 minutes on low flame until crisp. Keep aside.
  7. Add fresh grated coconut. Mix well. Serve hot
