ABOUT Moringa Multigrain Muthia RECIPE

To a Gujarati, Muthia is a most common food and to the kids it is a food they detest the most. I too am not a huge fan of Muthia maybe because I was fed it too often during my childhood leading to this partial averseness to it. Muthia are petit logs we shape in our fist meaning Mutthi. There are multiple ways we make them and multiple ways we use them. The Gujarati cuisine celebrates Muthia in number of ways.The Moringa Multigrain Muthia combines the goodness of Moringa and a variety of flours.

Ingredients Serving: 4

  1. 3 cups Moringa leaves
  2. 3/4 cup whole wheat flour
  3. 1/4 cup maize flour/makki ka atta
  4. 1/4 cup adai/handva flour or semolina
  5. 2 tablespoons chickpea flour/besan
  6. 1/4 cup oat meal
  7. 1 small onion, grated
  8. 1 teaspoon fennel seeds
  9. 3 teaspoons ginger+chili+garlic, minced
  10. 1/2 teaspoon Turmeric powder
  11. 1 teaspoon chili powder (adjust to taste)
  12. 2 teaspoon sugar
  13. 1 tablespoon sesame seeds
  14. 1/2 cup sour yogurt (adjust as required)
  15. 1 tablespoon oil
  16. a pinch of soda-bi-carb (optional)
  17. Salt to taste
  18. For Seasoning
  19. 2 Tablespoons Oil
  20. 1/8 tsp hing
  21. 1 dry whole red chili
  22. 1 teaspoon mustard seeds
  23. 1 tablespoon sesame seeds
  24. 3 tbsp Chopped coriander to garnish

Instructions

  1. Prepare the steamer, grease the perforated plate with oil and place it in the steamer.
  2. Wash and roughly chop the Moringa leaves.
  3. In a large mixing bowl. mix all the flours and add the oil. Massage the mixed flours with oil. Add the Moringa, grated onion, ginger, garlic, chili and all the other ingredients including yogurt.
  4. Knead to form a shaggy but pliable dough.
  5. Shape the dough in small fist sized logs. You should be manage to shape them using just one hand.
  6. Do not press the dough too tight. Lightly press it between your fingers and palm to shape it
  7. Place the shaped Muthias on the greased tray in steamer
  8. Steam the Muthia for 20-25 minutes.
  9. Serve the steamed Moringa Muthia with sesame or groundnut oil or Season the muthia.
  10. Allow the Muthia cool down to room temperature.
  11. Slice the Muthia in roundels of desired thickness.
  12. Place a heavy bottom karhai on medium flame. Heat the oil, splutter mustard seeds and sesame seeds. Add whole red chili and hing.
  13. Add sliced muthia to seasoning and cook till they have reached desired crispness.
  14. Garnish with chopped coriander and serve warm with a cup of tea.
